Garlic Rosemary Mashed Potatoes

Ingredients:

  • 4 large potatoes, peeled and cut into chunks

  • 4 cloves garlic, minced

  • 1/2 cup unsalted butter

  • 1/2 cup whole milk

  • 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, finely chopped)

  • Salt and pepper to taste

  • Chopped fresh chives for garnish (optional)

Instructions:

  1. Boil the Potatoes:

    • Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and simmer until the potatoes are fork-tender (approximately 15-20 minutes).

  2. Infuse Garlic in Butter:

    • While the potatoes are boiling, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and set aside.
